Mikey's Broccoli Cheese Soup

Introduction

Number of Servings: 6

Ingredients

    1/4 c. whole wheat flour
    1/2 teaspoon garlic powder
    1 c. Land O Lakes Fat Free half and half
    1 c 2% milk
    2 large carrots grated
    1 med. onion chopped
    1/4 cup butter
    8 cups chopped broccoli florets
    6 slices 2% Kraft American cheese
    3/4 c 2% fat shredded Cheddar
    2 cups College Hill Chicken broth

Directions

Makes 6 generous servings (you can thin this with more chicken broth to stretch the servings!)
Cook chopped onion and grated carrots in 1 T. butter until onions are translucent. Set aside. Make a roux using remaining butter and 1/4 cup flour. Brown gently, then start GRADUALLY adding fat free half and half and 2% milk. Make sure you stir constantly until mix is boiling. Turn down heat and simmer for 20 minutes. Make sure to keep stirring. Add in the 2 cups of chicken broth, then add in garlic powder, broccoli, onions and carrots. While cooking down for an additional 25 minutes, keep stirring on and off until broccoli is soft. For a finishing touch add in cheese and incorporate gradually so it doesn't separate. For additional seasoning, you can add 1/8 teaspoon nutmeg, a dash of hot sauce and just a tiny tad of dijon mustard. Consistency should be thick, if it's too thick or you want to stretch out the servings just add more chicken broth.
