Submitted by: KEEKBEAN

Introduction

Baked in custard cups, these individual layered casseroles are perfect for breakfast, brunch, or a light lunch. The mild green chiles and modest dose of hot pepper sauce add a light touch of spice with a Southwestern accent. Ingredients

4 slices white or wheat bread cut into one inch cubes.
1/4 lb fat free deli ham chopped
    1/4 lb jarlsberg cheese, shredded
    2 large eggs
    2 egg whites
1 1/2 cups lowfat or non fat milk
2 teaspoons mild green chiles, drained
    4 drops hot pepper sauce

Directions

1) Preheat oven to 400 degrees. Spray four 10 ox custard cups with nonstick spray.
2) Line the bottom of the custard cups with the bread cubes. Top each with the ham and cheese.
3) Whisk together the eggs, egg whites, milk, chiles, and pepper sauce in a bowl. Divide the mixture evenly among the custard cups. Place the cups on a baking pan and bake until puffed and golden, and a knife inserted in the center comes out clean, about 25 minutes.
