Panko Baked Pike

Introduction

Easy crunchy baked fish. Easy crunchy baked fish.
Number of Servings: 1

Ingredients

    Pike
    Mix tablespoon hummas with a tablespoon egg substitute.
    Put fish in egg/hummas mixture. It will be thick. If too thick add a touch of water. Spread 1/2 cup Panko crumbs on wax paper. Remove fish from egg/hummas mixture and put on the crumbs, skin side up. Shake to cover. Turn fish over and place on remainder of crumbs skin side down. Place panko covered fish (skin side down) on plate and leave in refrigerator for 20 to 30 minutes to set covered loosely with the wax paper.

    Place fish on baking sheet sprayed with PAM or other vegetable spray. Spray top of Fish with PAM.

    Bake 425 degrees for 20 minutes. I broil on low for 5 to 8 minutes to brown the crumbs. Serve with lemon wedges.

Directions

Makes one large serving or two 4 oz.. servings. I usually eat half and save the balance for a leftover.
