Ingredients

    8 whole pears, unpeeled
    1 cup water
    1 cup honey
    1.5 cups white sugar
    .5 tsp ground cloves
    .75 tsp ground cinnamon
    .25 tsp ground ginger
    1 Tb lemon juice

Directions

Wash the pears but do not peel or core them; slice into heavy saucepan--at least 3 quart six. Add water, cover, and cook until tender (about 30 minutes).

Remove from heat and press the pears through a colander or a food mill; measure the pear pulp (you should have 4 cups) and return to the pan. Using a frying pan, heat 3/4 cup sugar, stirring, until it melts and caramelizes to a medium brown color. Pour immediately into the pear pulp (the syrup will sizzle and harden, but dissolve again as the preserves cook). Add the remaining sugar, cloves, cinnamon, and ginger. Cook uncovered, until thick (about 45 minutes). Stir frequently as it begins to thicken to prevent from sticking; stir in honey towards end of cooking and let thicken again slightly. Stir in lemon juice just before removing it from heat.

Meanwhile prepare 4 half-pint canning jars* for canning, filling jars to within 1/4 inch of the rim. Heat in water-bath canner for 10 minutes. Makes 4 half-pints.
