Curried Squash with Couscous

Ingredients

1/3 cup french toasted couscous
2 cups water
1 1/2 tsp beef boullion
2 cups water
1 pound sliced mushrooms
1 cup sliced zucchini
1 cup sliced summer squash
1/4 cup sliced scallions
1 tbsp curry powder
salt and pepper to taste
Directions
Boil water in a sauce pan.
Add boullion and couscous.
Cook 5 to 10 minutes then remove from heat and cover with a tight fitting lid.
Meanwhile:
Heat a large skillet over medium flame and add water.
Wet-sautee mushrooms, zucchini, and summer squash until softened.
This should take about 10 to 15 minutes.
When nearly all of the water has evaporated, add curry powder.
Stir well.
Fluff couscous and add to vegetable mixture.
Mix well.
Garnish with scallions and enjoy.
Makes 3 1-cup servings.
