Introduction

I wanted good hummus, not store bought with all the sodium. Do yourself a favor buy dry beans, soak them overnight. Then boil them till tender without salt. Number of Servings: 8

Ingredients

    Chickpeas (garbanzo beans), 2 cups reserve some liquid
    Tahini (sesame paste), 8 tbsp
    Olive Oil, .25 cup
    Garlic, 3 cloves
    Cumin (ground), 3 tsp
    Pepper, black, 1 tsp
    Pepper, red or cayenne, .5 tsp
    Lemon juice, .33 cup

Directions

Put everything in a food processor and begin to process; add the chickpea liquid or water as needed to allow the machine to produce a smooth puree.
Serve drizzled with a little olive oil (not in nutrition count) and paprika on top.

.25 cups per serving, 8 servings

Makes a great sandwich, appetizer, and easy snack.
