Chili Rellano Casserole

Introduction

Number of Servings: 8

Ingredients

    1 cup reduced fat mexican shredded cheese, divided
    1 can (12 oz.) evaporated skim milk
    3/4 cup (6 oz.) egg substitute or 5-6 egg whites, beaten
    6 (7 inch) corn tortillas, cut into approx. 1 inch pieces
    1 can chopped green chilis (optional) or 2 T crushed hot peppers (optional)
    1/4 t salt (optional)
    1/2 cut salsa
    2 T chopped cilantro (optional)
    fat free sour cream (to accompany) optional

Directions

Coat 10 inch deep dish pie plate or 8-inch square baking ish with nonstick cooking spray. In a medium bowl, combine 1/2 cup cheese, milk, egg substitute (or egg whites), tortillas, chilies, salsa, and if desired, salt. (the nutrition info does not have the salt added). Mix well and pour in to prepared dish.

Note - you can adjust

Bake at 375 degrees for 30 to 32 minutes, until set. Remove from oven. Sprinkle with remaining 1/2 cup of cheese. Bake one minute more or until cheese is melted. Serve with fat free / low fat sour cream and cilantro, if desired.

Makes 8 small servings or 4 larger servings. Yum !

Note -- other options you can add - 1 can corn-drained, taco seasoning, sautéed zucchini and onion. Go ahead and experiment with this recipe.
