Beef Meatball Winter Stew

Introduction

A hearty vegetable stew with meatballs and beans for added protein value. Good to make for dinner and have enough for the next day's lunch (timesaver). Number of Servings: 5

Ingredients

    2 cups Red Kidney Beans
    500 grams Extra Lean Ground Beef
    1 large fresh Egg
    .5 cup Oats
    1.5 tsp Salt
    1 Eggplant (cubed and prepared = 2 cups)
    1 cup Fresh Carrot, washed and sliced
    2 Medium Zucchini, sliced and quartered = 2 cups
    3 cups Fresh sliced/ pieces Mushrooms
    .5 cup Tomato Paste

Directions

Sort beans and put into slow cooker (crock-pot). Make 50 gram meatballs (about 1.5 Tbsp.) with Beef, Oats, Egg and .5 tsp Salt. Place meatballs on the beans in the slow cooker. Add Carrots and Zucchini. Sprinkle .5 tsp salt. Add Eggplant, Mushroom and sprinkle last .5 tsp salt. Top with the Tomato Paste.
Let cook for 5+ hours until done.
Turn off and wait to cool for ~30 minutes.
Serve hot, making sure every person gets 2 meatballs.
Makes 5 2-cup servings

Can add pepper or other spices to taste, to reduce sodium. Can substitute Beef with Chicken or Turkey as desired.
