Banana Raisin Bran Muffins

Introduction

Cross between banana bread and bran muffin, with extra fiber and vitamins! We love these! Cross between banana bread and bran muffin, with extra fiber and vitamins! We love these!

Ingredients

    2c total raisin bran, crushed
    1/2 banana mashed
    2 tbsp smart balance cooking oil
    2 tbsp egg whites
    1/4 c chopped walnuts
    1 tsp vanilla
    1/2 c wheat flour
    1/2 c white flour
    1/2 tsp baking soda
    1/4 c splenda w fiber
    1/4 c brown sugar
    1 EB egg
    1/2 tsp salt
    1 c milk, 2 percent used




Directions

Soak cereal in liquids for 5 min, then stir into dry. Use non stick spray for muffin papers and tin. Makes 12, bake at 400 for 20 min.
