Pumpkin Spice Muffin (Just like D&D)

Ingredients

    Pumpkin Spice Muffins (Just like Dunkin Donuts)

    Betty Crocker Super Moist Spice Cake Dry Mix Only
    100% Libby pure pumpkin, 2 cup
    Egg substitute, liquid (Egg Beaters), 1/2 cup
    Vanilla Extract, 1 tsp
    Sour cream, fat free, 15 grams
    Applesauce, unsweetened, 1/3 cup
    Pumpkin Pie spice, 1 tsp
    Jello sugar free fat free instant vanilla pudding & pie filling dry mix, 1.34oz

    For top of muffin
    Brown Sugar, .75 cup
    Betty Crocker Whipped Cream Cheese Frosting cup

    Make approximately 18 muffins


Directions

Pumpkin Spice Muffins (Just like Dunkin Donuts)

Betty Crocker Super Moist Spice Cake Dry Mix Only,
100% Libby pure pumpkin, 2 cup
Egg substitute, liquid (Egg Beaters), 1/2 cup
Vanilla Extract, 1 tsp
Sour cream, fat free, 15 grams
Applesauce, unsweetened, 1/3 cup
Pumpkin Pie spice, 1 tsp
Jello sugar free fat free instant vanilla pudding & pie filling dry mix, 1.34oz

For top of muffin
Brown Sugar, .75 cup
Betty Crocker Whipped Cream Cheese Frosting cup


350degree oven
Make approximately 18 muffins

Mix by hand all ingredients together except for the brown sugar & frosting.
Fill cupcake trays about full.
Sprinkle about approximately 1 teaspoon of brown sugar on top of each muffin.
Bake for approximately 15 mins (test after 12-13 depending on your oven). Use a toothpick to check to see if done. The toothpick will come out clean when done.
Once muffins are completely cooled, melt the frosting for about 10 seconds in the microwave, stir and drizzle over each muffin. If not melted enough, microwave for a few more seconds.
Note: I started with about 2 tbsp at a time of the frosting so not to melt all the frosting at once.
