1 can refried beans
2 packages taco seasoning mix
1+/- TBLS Hot Sauce (to taste)
1 TBLS Fat Free Milk
1 cup Light Mayo
1 cup drained (overnight) nonfat yogurt - plain*
1 cup fresh spinach
1/2 cup chopped tomatoes
1 1/2 cups Mexican Blend 2% shreddedcheese
3 TBLS chopped onion
jalapeno peppers* optional
*yogurt should be drained through a cheese cloth overnight - a fine mesh strainer with a coffee filter works well too :)
Mix Light Mayo, drained nonfat yogurt, and taco seasoning packet. Spread over bean layer.
Add a layer of shredded spinach, cheese, tomatoes, jalapenos & onions over the top.
*Please note this recipe is VERY high in sodium; if I were to make it again I would use low sodium beans and low sodium taco seasoning...
