Introduction

Ingredients

    1 small carton of Egg Beaters (7 servings)
    3 scallions, sliced
    1/2 red sweet pepper, diced
    4 Morningstar Sausage patties
    3 slices Kraft 2% cheese (Sharp cheddar)

Directions

Spray 12 cup muffin pan with cooking spray. NOTE: I use the silicone rubbery ones that work great! Preheat oven to 375. Brown sausage in non-stick pan.

Divide egg beaters evenly into muffin cups. Divide each sausage pattie into thirds so you will have 12 pieces (one for each cup). Crumble each piece and place on top of cup. Sprinkle onion/pepper mixture evenly onto each cup. Divide 3 cheese slices into 12 and place one piece on each muffin cup. Bake for 30 minutes.
