Ingredients

    1 lb ground turkey
1 cup dry, seasoned bread crumbs
    1 large egg, slightly beaten
    1/2 cup grated parmesan cheese
    2 tbsp freshly chopped parsley

Directions

Preheat the oven to 375. Spray a baking sheet with nonstick spray and set aside.

In a large bowl, combine all the ingredients. Do not overmix. I use a fork to "fluff" the mixture, which sufficiently mixes it without overmixing, which can cause dryness.

Make your meatballs about the size of a ping pong ball. (You can make them larger or smaller, depending on what you want, but you'll want to adjust the cooking time.) I use a small cookie scoop to help me keep the meatballs all the same size. Place on the baking sheet and bake them at 375 for 30-35 minutes, turning the meatballs after about 20 minutes through the cooking time.

This recipe makes about 25-30 meatballs, depending on the size you make. The nutritional facts are set for a 5-meatballs-per-person portion.
