Cricket's Mediterranian Chicken Sandwich

Introduction

A great sandwich for any season - chilled in summer, right off the skillet in winter. A great sandwich for any season - chilled in summer, right off the skillet in winter.
Number of Servings: 4

Ingredients

    For 4 Sandwiches:

    * 2 cups Ken's Steak House Lite Balsamic & Basil Vinaigrette
    * 4 small Chicken breasts (frozen from-the-bag kind are great)
    * 2 slices of Provolone Cheese
    * 4 slices of Nice, Fresh Tomatoes
    * onion slices, if you wish
    * 1/4 cup Canola oil
    * Any extra little bit of Basil you feel like throwing on the tomatoes
    * Your favorite lo-carb or lo-cal bread: I used Acme-brand Tomato-Basil Tuscany Bread

Directions

1} Trim any remaining fat from chicken breasts, put them and Ken's dressing in a ziplock bag, mush around a bit, and put in the fridge for at least 4 hours.
* The longer they marinate, the more tender the chicken, so you may want to put them in over night.

2} Put canola oil in a large (preferably non-stick) frying pan on high heat.

3} Allow oil to aquire shimmer, then turn heat to med. high and place chicken breasts in pan.

4} Cook until chicken is done all the way through (about 15 to 20 minutes for a full breast), flipping to cook evenly.
* Pour out excess liquid occasionally, if you wish.

5} When chicken has a bit of brown on each side, turn head to low and place 1/2 slice of Provolone on each breast.

6} When Provolone is melty, put Tomato Slices on top of cheese and sprinkle any additional basil.

7} When tomato is slightly warm, turn off stove and remove pan from heat.

8} Put each breast on a slice of bread, add onions if you want them, plop the other slice on top and ENJOY!! :)
