2 pounds fresh spinach, rinsed and drained
Ό cup olive oil
2 medium white onions
2 small garlic cloves
1 cup long grain white or brown rice
2 tablespoons tomato paste
2 bay leaves
2 cups chicken stock (low-sodium preferred)
salt and pepper to taste
2.Pour in chicken stock and cover saucepan. Simmer on medium heat until rice is tender and liquid is absorbed. Remove bay leaves and serve.
