Squash, Bacon & Goat Cheese Pasta

Introduction
Creamy pasta with less calories! Creamy pasta with less calories!Number of Servings: 3
Ingredients

-4 slices of bacon
-1/2 yellow onion, sliced thinly
-1/2 lb. of pasta
-3 small zucchini or yellow squash, sliced thinly
-3 oz. of soft goat cheese
Directions
Cook bacon in a large skillet until crispy. Remove and let drain on paper towels. Reserve one Tablespoon of the bacon grease. Add the onion to the bacon grease and cook on medium-low heat until very soft and beginning to brown, about 15 minutes.
While the onion is cooking, boil water (salted) for pasta. Add pasta and cook per instructions.
Add squash to the onion and cook until tender, about 5 minutes.
Scoop out 1/2 c. of the pasta water and set aside. Drain pasta and add to pot with squash and onions. Crumble goat cheese on top and stir until it is evenly distributed. Add reserved pasta water to make the sauce creamy. Crumble bacon over top and serve, hot.
Makes 3 generous servings.
