Quick Roasted Veggies

Introduction

Mixed of veggies for dinner or lunch. Mixed of veggies for dinner or lunch.
Number of Servings: 4

Ingredients

    Head Califlower, cleaned and florets separated
    1 Zucchini, chopped
    1 Onion, chopped
    1 Head Garlic, chopped course or whole cloves
    1 Bell Pepper, chopped course
    1 Fresh tomato, chopped
    Olive Oil
    Cumin
    Coriander

Directions

Pre-heat oven 425.
Spread florets & garlic gloves in shallow baking sheet and coat w/ oil
Place into oven while preparing other veggies
Add zucchini, onion, bell pepper and coat with olive oil.
Season with cumin and coriander while tossing all veggies together.
Cook to desired temperature or serve al dente
Add fresh chopped tomato on top of dish when ready to serve.
Serve veggies with tempeh or fish if desire.
