Mashed Potatoes

Number of Servings: 4

Ingredients

    2 cups potatoes (works with white, red or sweet potatoes)
    2 cups cauliflower florets
    3 TBSP. of Smart Balance Buttery Spread
    1/2 cup plain non-fat yogurt
    1/4 to 1/2 cups original soy or skim milk
    pinch of salt
    pinch of freshly ground black pepper

Directions

Steam cauliflower and boil potatoes until soft. Blend with a mixer or puree in a food processor, depending on the consistency you prefer. Add the rest of the ingredients and mix well. Serves 4.
