Curry Shrimp

Number of Servings: 5

Ingredients

    1 1/2 lbs shrimp
    1 1/2 cup coconut milk (lite)
    1 cup fat free chicken broth
    1 cup sweet potato diced
    1 cup red pepper diced
    2 tblsp cilantro
    4 tblsp lime juice
    4 tblsp curry powder (or more to taste)
    1 cup bean sprouts
    1-2 cloves garlic, crushed
    1 tblsp seasame oil
    1 tblsp corn starch

Directions

heat oil in pan. Cook diced potato and red pepper til soft. Add Garlic, curry powder and chicken broth. Cook until broth starts to bubble.
Add bean sprouts, shrimp and coconut milk. Cook until shrimp is pink. Add lime juice.
Add corn starch until liquid thickens.
add cilantro and remove from heat.

makes about 5 1 cup servings
