Chicken Enchiladas

Introduction

Number of Servings: 6

Ingredients

    2 Boneless Skinless Chicken Breasts (cooked)
    1 Can Diced Green Chilies
    1 Small Diced Purple Onion
    1 Package Fat Free Cream Cheese
    12 Corn Tortillas
    1 Large Can Green Enchilada Sauce

Directions

Shred the chicken and mix with chilies, onion, and cream cheese. Dip a tortilla in enchilada sauce and lightly heat in a pan, transfer to a 9x13 baking pan that you spray with pam. Add a spoonful of the chicken mixture and roll the tortilla. Continue until all of the tortillas are filled. Pour the rest of the enchilada sauce over the rolled enchiladas. Bake at 350 for about 30 minutes. If you are really into the authentic flavor, sprinkle with Queso.
