    1/4 TSP BLACK PEPPER
    1 TBSP LEMON JUICE
    2 TBSP OLIVE OIL
    1/2 C WHITE WINE
    2 C SPINACH LEAVES (TORN)
    1/2 TSP SALT
    50 - 100 GMS LIGHT FETA CHEESE (CUBED)
    1 TSP DRIED OREGANO
    1 C CHICKEN STOCK
    1 RIPE TOMATO CHOPPED
    6 BONELESS SKINLESS CHICKEN BREASTS

Directions

MIX FLOUR, OREGANO & PEPPER IN A SHALLOW PAN
DREDGE CHICKEN & FRY IN OLIVE OIL IN A LARGE FRYING PAN UNTIL BROWNED
MIX STOCK, WINE, LEMON JUICE, SALT & ANY REMAINING FLOUR IN A 2 CUP MEASURE
REMOVE CHICKEN FROM PAN & ADD LIQUIDS TO PAN
HEAT TILL BOILING STIRRING FREQUENTLY
RETURN CHICKEN TO PAN AND TURN TO COAT WELL COVER, LOWER HEAT AND SIMMER UNTIL MEAT IS COOKED THROUGH
ADD SPINACH AND TOMATO
JUST BEFORE SERVING ADD CUBED FETA CHEESE
SERVE IMMEDIATELY OVER RICE , NOODLES OR OVEN FRIED POTATOES
