Sukiyaki-Style Stir Fry

Introduction

Just used a lot of veggies I needed to use up. Served over quinoa! So good!

Number of Servings: 2

Ingredients

    2tsp Olive OIl
    2c Bean Sprouts
    1/3c Green Onions, raw, 2" long chopped
    1/3c White Onion, chopped
    2c Cabbage (any kind will do!)
    1/2tsp Ginger Root, fresh grated
    1/4 clove Garlic
    1 1/4tsp Sugar
    1 1/2T Soy Sauce
    1/2c Kale, chopped
    1/4 Water
    1c Quinoa

Directions

At medium, heat olive oil in pan, add all veggies. Add soy sauce, sugar, and about a quarter cup of water. Stew and let veggies soften and soak up flavors for 10-15 minutes.

Serve over cooked quinoa.

If you're daring, scramble a raw egg in your individual bowl and enjoy an extra protein punch and different texture mixed in with your sukiyaki. I love it!
