Low Calorie Chicken & broccoli Stirfry

Introduction

Ingredients

1 Chicken Breast fresh or thawed (one unit or 1/4 lb)
1 package of Steam Freah Broccoli (or 2 cups cooked Broccoli)
1 Package of 10-minute brown rice (2 cups)
1/4 cup Soy Sauce
2 tsps ground ginger
2 tsps Garlic Salt
2 tsp Red Pepper
1 tsp miced garlic
Cooking spray
Directions
Microwave broccolli and Brown rice according to package. Meanwhile, cut chicken breast into 1 inch cubes. Season chicken with Garlic salt, red pepper, and ginger. Spray frying pan with cooking spray and add minced garlic. once the pan gets hot, add chicken and cook throughly. Add brown rice, broccolli, and soy sauce and Stir until well blended (add garlic salt, ginger and red pepper to taste). Cook for 5 minutes and serve.
Makes 6 1-cup servings.

Mine didn't look like much, but tasted pretty good. I substituted a mixed frozen vegetable (broccoli, carrots, green beans, mushrooms) for the broccoli, Mrs. Dash Extra Spicy instead of red pepper, and it tasted pretty good. I'll use actual cayenne next time, just a little, to spice it up. - 7/17/10
