Couscous Salad

Introduction

Number of Servings: 6

Ingredients

    1 cup dry couscous
    1 cup chicken broth
    2 Tbsp extra-virgin olive oil
    1 large tomato, chopped
    1- 2.25 can sliced black olives, drained
    1- 14 oz. can artichoke hearts, chopped
    1 Tbsp Weber Zesty Lemon Seasoning (or use lemon pepper)
    juice of one lemon
    salt and pepper to taste


Directions

1. Bring chicken broth to a boil in a saucepan. Add dry couscous, cover and remove from heat. Let stand 5 minutes.
2. Add olive oil and stir. Transfer to bowl.
3. Add tomato, artichoke hearts, and black olives, lemon seasoning and lemon juice. Mix.
4. Season with salt and pepper to taste.
5. Serve warm or cold. Makes 6 1-cup servings.
