Instant Potato Soup for 1



Introduction

I like this recipe because I don't need to make in bulk and I can measure a reasonable amount of instant potatoes. I like this recipe because I don't need to make in bulk and I can measure a reasonable amount of instant potatoes.
Number of Servings: 1

Ingredients

    Instant Potatoes, 1/8 cup = 2 Tbl.
    Pepperoni, 7 slices, chopped, for seasoning
    Water
    Heavy Cream,1 Tbs.

Directions

Combine all in a microwave safe mug. Microwave 1 1/2 to 2 minutes or until hot. Soup thickens as it cools.

Recipe from Cooks.com uses 1 tsp instant chicken bouillon but I don't want the added sodium. It also calls for 3/4 C milk but I cannot use milk.

Dash of any or all of the following: pepper, thyme, onion powder, celery salt

You can use milk, half & half or dry milk to save on calories. I am lactose intolerant but can use heavy cream so I do.
