Bursting Blueberry Muffins

Introduction

These are more delicious, moist and cake-like than what you would get at the coffee shop.
The only fat is in the nuts, which are OPTIONAL.
These muffins are packed with protein and fiber and at only 150 CALORIES you will not believe how much of a nutritional weight they can carry!
Best of all - they taste incredible!!!!

Ingredients

    Wet:
    1/2 cup nonfat milk
    1/4 cup egg beaters
    1 single-serve cup cinnamon applesauce
    1 single-serve cup chobani nonfat vanilla greek yogurt
    1/4 cup honey

    Dry:
    1 cup oats
    1 cup whole wheat flour
    1 teaspoon baking powder
    1 teaspoon baking soda
    1/4 teaspoon salt
    1/2 teaspoon cinnamon

    Mix-ins:
    1 1/2 cups frozen bluberries
    1/2 cup chopped pecans (optional)

Directions

Preheat oven to 400
Prepare muffin tins with paper liners

In a medium bowl wisk all wet ingredients until smooth and creamy

In a large bowl stir together all dry ingredients, making a well in the center.

Pour wet ingredients into dry ingredients all at once, mixing gently until evenly combined, do not overmix.

Fold in mix-ins

Spoon mixture into muffin tins.
Optional: sprinkle with a little splenda and extra cinnamon for a sweet touch.
Bake 15-20 minutes or until a toothpick comes out clean. Do not overbake

Remove from muffin tin immediately and allow to cool (at least a little so they dont stick!)
