Busy Cook's Burgundy Beef Stew

Introduction

I adapted this from a church cookbook my mother-in-law gave me. You know those church books -- people don't submit recipes unless they're really good!! Plus, I tweaked it to make it even better! Sodium count isn't bad because I left out the added salt the recipe originally called for, but to reduce it even further use no salt added tomato products. Number of Servings: 12

Ingredients

    2 pounds lean beef stew meat, cut into chunks
    3 medium onions, quartered
    5-6 carrots, peeled and cut into chunks
    4-5 parsnips, peeled and cut into chunks
    5 medium sweet potatoes or yams, cut into chunks (you can use white if you prefer)
    1 C chopped celery
    1 can (28 oz) tomatoes -- whatever consistency you like (nutrition calculated using 2 14-1/2 ounce cans of diced)
    1 can (8 oz) tomato sauce
    3 T tapioca pearls
    2 bay leaves
    1 C burgundy (or any red) wine
    1/4 C A-1 Steak Sauce
    Fresh ground black pepper to taste
    Tabasco sauce to taste (optional)

Directions

Place first 5 ingredients into large dutch oven. Mix rest of ingredients together and pour over the top; stir to combine. Cover with lid and bake in preheated 350 degree oven for 5 hours. DO NOT OPEN OVEN WHILE COOKING.

Also works well in a slow cooker.
