Introduction

Place two layers of waxed paper between any extra crepes and freeze them. Let crepes thaw at room temperature for one hour before using. Place two layers of waxed paper between any extra crepes and freeze them. Let crepes thaw at room temperature for one hour before using.

Ingredients

    1 1/2 c. milk
    1/2 c. all-purpose flour
    1/2 c. whole-wheat flour
    2 eggs
    1 T. canola oil
    1/4 tsp. salt

Directions

In a bowl combine milk, flours, eggs, oil and salt. Beat until well mixed. Heat a lightly greased 6-inch skillet to spread batter. Return to heat; brown on one side only. (Or, cook on an inverted crepe maker according to manufacturer's directions.) Invert pan over paper towels; remove crepe. Repeat with remaining batter, greasing skillet occasionally. You can fill with you choice of fruit and cottage cheese - or anything else your imagination thinks of. Makes 18
