Leftover Brown Rice Pudding

Introduction

This is a great way to use up leftover rice and make a yummy breakfast or a healthy dessert. This is a great way to use up leftover rice and make a yummy breakfast or a healthy dessert.
Number of Servings: 3

Ingredients

    2 cups cooked brown rice
    1 cup non-fat milk
    1/4 cup raisins (unpacked)
    2 Tbsp sliced almonds
    .5 tsp cinnamon
    .5 tsp vanilla
    2 Tbsp maple syrup

Directions

Makes 3 servings

Combine all ingredients in a small saucepan, stir until well mixed. Bring to a boil, and then reduce heat to medium. Cook, stirring occasionally, until a pudding-like consistency is achieved, about 15 minutes. Can be served warm or chilled.
