Karen's Mexican Hot Chocolate

Ingredients

    Ingredients:
    Milk, nonfat, 3/4 cup
    Vanilla Extract, 1/8-1/4 tsp
    *Pumpkin Pie spice, 1/8 tsp
    Decaffeinated Coffee, 1/2 cup
    Cocoa, dry powder, unsweetened, 1 tsp.
    *Splenda, 1/4 tsp. or to taste
    Coolwhip, Ultra Low-Fat (optional - add calories to this recipe, if used)

Directions

Boil water to make coffee.
In cup, mix together instant coffee,spice, vanilla extract and cocoa powder. Slowly add skim milk, stirring constantly until smooth in consistency. Add boiling water and stir.

This recipe can be varied by adding ice for a nice summer drink. You may also top it with Ultra Lowfat Coolwhip. Make certain to add those calories to the recipe though.
