Easy black bean and corn salad

Introduction

Quick and easy version of a tasy mexican side dish.

Best when made ahead and flavors allowed to blend.

Number of Servings: 6

Ingredients

    1 can sweet yellow corn (12 oz) - drained
    1 can black beans (12 oz) - drained and rinsed
    .5 of a medium sweet onion, chopped fine
    fresh cilantro, chopped - amount to taste (typically about a quarter of a grocery store bundle)
    .25 cup Balsamic vinegar

Directions

Add all ingredients to a medium serving bowl and toss well. (Metal bowl not recommended). Refrigerate until ready to serve.

Tasty on it's own or if served with tortilla chips to "dip".

Tastes best if ingredients have a change to blend, so optimally make this ahead of time, cover and refrigerate, stirring occasionally until ready to serve.
