Karen's Flavour Fiesta Chicken Tortillas

Ingredients

Chicken Breast, no skin, 8 ounces, cooked and sliced
*Whole Grain Tortilla - Ancient Grain (8- 6" Tortillas)
Onions, raw, 1 medium (2-1/2" dia), chopped
Sweet Corn, Fresh, 1/2 cup
Beans, black, 1/2 cup
Peppers, sweet, red, raw, sliced, 1/2 cup
Yellow bell peppers, 1/2 cup
*Cajun Seasoning, 1/4 tsp or to taste
*Chili Powder, 1/2 tsp or to taste
*Pace Salsa- Chunky Salsa, medium, 4 tbsp (use mild or hot salsa if you prefer more or less heat)
Fat free sour cream, 1 tbsp
Cheese, Fat Free cheddar cheese, 1/4 cup
Bull's Eye - Bold Original BBQ Sauce), 1 tsp
Lettuce, shredded, 1 cup (optional)
Directions
Bake chicken breast in a 350 F oven for 40 minutes or use leftover chicken breast. Slice into long thin strips when cool enough to handle.
Chop onion and peppers into long thin slices. Spray a large frying pan with olive oil or canola oil-flavoured Pam cooking spray. Saute onion and peppers until softened about 10 minutes. Add all other ingredients, except sour cream and cheese. Just as you are about to serve, mix in sour cream.
Divide mixture equally amongst the 8 tortillas. If using shredded lettuce, add lettuce. Sprinkle cheese on top.
