Italian Chicken Salad with Grapes

Introduction

I just threw this together with some leftovers, and I was thrilled with its tastiness! I used leftover slow cooker chicken, but rotisserie would be very yummy, or even grilled. I just threw this together with some leftovers, and I was thrilled with its tastiness! I used leftover slow cooker chicken, but rotisserie would be very yummy, or even grilled.

Ingredients

    2 Skinless, boneless chicken breasts, roasted or grilled, shredded
    16 Red grapes, quartered
    4T Veganaise or oil-based mayonnaise
    2T Garlic vinegarette, like Annie's Naturals Roasted Garlic Vinaigrette

Directions

Combine Vegannaise or mayo with vinegarette to create a yogurt-like dressing. Combine chicken, dressing and grapes, roll in a tortilla and enjoy!

Note: You could use less dressing for a drier salad and to save calories.
