Rumbamel's Creamy Spinach and Chicken Pasta

Introduction

I originally found this in a Kraft e-mail and realized I had all the ingredients to make it that night so decided to give it a try with some added chicken and a few tweaks. I hope you enjoy it! Ingredients

    -8 oz dry Wacky Mac pasta, then cooked
    -134g or about 1/2 -9 oz bag of fresh spinach, chopped
    -1 clove fresh garlic, minced
    -1 C 2% low fat cottage cheese, I prefer Daisy brand
    -1/4 C skim milk (fat free)
    -4 T or 1/4 C grated parmesan cheese
    -1 t dried basil
    -1/4 t salt
    -1/4 t black pepper
    -1 jar, 12 oz, roasted red bell peppers, drained and chopped
    -8 oz boneless skinless chicken breast, cooked and diced

Directions

--Cook pasta as directed and then drain by scooping out and set aside. Cook your chopped spinach in the boiling water for about 1 minute and then drain it in a fine strainer and rinse it in cold water to stop the cooking. **Spinach can also be just put in the microwave in a save dish covered and cooked for 1 minute on high and then rinsed and drained. No extra water is necessary.**

--In a blender, blend the garlic, milk and cottage cheese until smooth. Then add the parmesan, salt, pepper and basil. ***Spinach can also be mixed in the blender if desired, but it will make your final product look a lime green color and you won't see the bits of spinach.***

--Add your creamy spice mix, spinach, pasta, chicken and roasted peppers together in one pot and gently mix until blended. Heat if necessary.

--Makes 6 servings of 1 C each.
