Barb and Ed's Sausage & Peppers

Introduction

Italian sausage & peppers & onions in tomatoes. Italian sausage & peppers & onions in tomatoes.

Ingredients

    Italian Hot Sausage - 24 links
    Italian Mild Sausage - 24 links
    Green Bell Peppers - 20
    Yellow Onion - 10
    Crushed Tomatoes - 5 lb can
    Dried Oregano - 10 Tbsp
    Dried Basil - 5 Tbsp
    Dried Parsley - 10 Tbsp

Directions

Brown sausage

In large pot put can of crushed tomatoes. Slice green bell peppers and onions and add to crushed tomatoes. As sausage is cooked, add to tomato pepper mixture.

Simmer a minimum of 6 hours. We found simmering it overnight (12 hours or more) makes it even better.

Serve on sub rolls or over rice.

Freezes great! That's why I make such a huge amount. Great for quick meals.
