Yummy and comforting on a cold and rainy day. This soup is low enough in calories that you can pair it with a piece of homemade cornbread and not ruin your diet. Number of Servings: 10

Ingredients

    2 Tbsp Olive Oil
    14oz Hillshire Farms Turkey Polenska Kielbasa
    1 can Del Monte petite cut diced tomatoes
    1 can S&W black beans
    1 bag Kroger frozen brown rice
    1 bag Kroger frozen 3 pepper & onion blend
    1 bag Kroger frozen golden sweet corn
    1 Tbsp garlic salt
    1 packet hot chili seasoning
    1 tsp black pepper

Directions

Heat olive oil in large stock pot. Cut turkey sausage into rounds and saute in olive oil. Once the sausage is browned, add the tomatoes, black beans, brown rice, peppers & onions mixture, corn and spices. Simmer uncovered for at least 30 minutes. Serving size: 1 Cup. Recipe makes about 10 servings.
