Introduction

No trans fats, and fat content can be reduced a litttle further. A very effective and much healthier, substitute for that famous baking mix, at a fraction of the price. Store in airtight container, no need to refrigerate if used up within a couple of months. Shake into measuring cup stood on a plate (don't scoop from container or it will compact).
1 cup = c140g.

Ingredients

    500g wholemeal flour, finely milled
    500g plain white all-purpose flour
    40g baking powder
    15g salt
    125g non-fat milk powder
    185ml (3/4 cup) extra virgin olive oil

Directions

Makes c1.365 kg baking mix
Tip all dry ingredients into a very large bowl or basin.
Mix very thoroughly with your hands to make sure there are no clumps of baking pwoder.
Add oil and rub into the flour mixture until it resembles very fine breadcrumbs.
Store in airtight container, and substitute for BSQUCK in any of their recipes, e.g. waffles, quick breads, impossible pies.
