Applesauce Oatmeal Muffins-modified

Ingredients

    1 cup old fashioned Quaker Oats
    1 cup skim milk
    2 egg whites
    3/4 cup unsweetened applesauce
    3/4 cup whole wheat flour
    1/4 cup white all purpose flour
    1/2 cup brown sugar
    1 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    2 Tbs cinnamon
    2 small boxes raisins (3oz)
    1 diced apple
    Cinnamon & sugar for topping if desired

Directions

Soak the oats in milk until lliquid is absorbed (15-30 min). Preheat oven to 400 degrees. Spray muffin pan with cooking spray. Mix dry ingredients in one bowl. Mix wet ingredients in another bowl. Add wet to dry and mix until just combined. Add nuts or fruits etc. if desired. Do not over mix batter or the muffins will be tough. Spoon muffin mixture into sprayed muffin pan (don't use paper cups - will stick) Bake at 400 degrees about 18 minutes or until done. Top with additional cinnamon & sugar if desired. Can be frozen and reheated.
