Easy Chicken "Melt"

Introduction

This makes a great meal for lunch or dinner.
Can also be used as a dip for crackers at a party!

Number of Servings: 6

Ingredients

    6 oz Chopped Chicken (skin removed)
    2 Chopped Scallions (Green Onions)
    4 oz Chopped Roasted Red Peppers
    3 oz Fat Free Cream Cheese (softened)
    1/2 cup Fat Free Shredded Cheese
    6 Whole Wheat Flour Tortilla (97% Fat Free)




Directions

Mix all Ingredients well. Spread about 2-3 Tablespoons onto half of the Tortilla & fold in half. Lightly spray one side of tortilla w/ either Spray Butter or low Fat Oil Spray and "fry" till lightly brown & then spray the other side & till its lightly brown. This also melts the cheeses. Cut in half & enjoy.
**This is also very good using any Tuna.
**Cooked chicken or canned chicken
(Nutritional Valves will change if using other types of chicken instead of Rotisserie Chicken or if using tuna)
