1/2 lb. whole wheat fusili (the picture here shows rotini)
1 14.5 oz. can fire-roasted diced tomatoes with green chiles
3/4 lb. large shrimp, peeled and deveined
4 scallions - chopped
1 t salt
1/2 c shredded mozzarella cheese
1. Cook the fusilli according to the package directions. (I used rotini in the picture)
2. Meanwhile, bring the tomatoes to a boil in a large skillet. reduce heat and simmer until slightly thickened, about 4 min. Add the shrimp, scallions and salt; cook, stirring frequently, just until the shrimp are opaque in the center, about 4 min.
3. Drain the pasta and stir into the shrimp mixture. Serve sprinkled with the cheese.
