Cornmeal Crusted Chicken Nuggets

Introduction

Crunchy chicken nuggets without all the fat and calories! Crunchy chicken nuggets without all the fat and calories!
Number of Servings: 4

Ingredients

    1lb boneless skinless chicken breasts
    3 tbsp yellow cornmeal
    1 dash salt
    1 tsp black pepper

Directions

Cut the chicken into nugget-size pieces. Sprinkle with salt and pepper. Put the cornmeal in a bowl. Put chicken in bowl and toss to coat.
Heat oil in skillet in medium-high heat. Put chicken in single layer in pan and reduce heat to medium. Cook chicken all the way through, until no pink remains, turning once or twice. Chicken will be golden brown and delicious!

If you want to save calories and fat you can cook these in your broiler, just coat lightly with olive oil cooking spray. I don't mind doing them on the stove-top with evoo because there is just a small amount of oil and it has so many health benefits!
