Introduction

This is a recipe that I got from a co-worker, but I've changed the ingredients to make it a 'lighter', more protein packed version. This is a recipe that I got from a co-worker, but I've changed the ingredients to make it a 'lighter', more protein packed version.
Number of Servings: 6

Ingredients

    2 cups pc whole wheat rotini
    5 tbsp. becel light margarine
    1 cups milk
    2 cups old sharp cheese (shredded)
    3 tbsp. flour
    1 cup greek yogurt
    cup chopped onions
    cup chopped celery
    tsp. salt
    tsp. pepper

Directions

Bring large pot of salted water to boil add pasta and cook according to pasta drain and return to pot meanwhile make sauce:

Melt margarine. Blend in flour, greek yogurt and cheese until thickened (reserve cup shredded cheese for topping). Add onion and celery. Mix all into macaroni and turn into buttered casserole dish.

Sprinkle remaining cheese on top bake uncovered at 375 for 45 minutes
