Vegetarian Casserole

Introduction

Easy casserole that's low in calories but very filling! Easy casserole that's low in calories but very filling!
Number of Servings: 6

Ingredients

    2 cans pinto beans, drained
    2 cans diced tomatoes, drained
    1pkg Whole Wheat Egg Noodles
    1 small onion
    1 clove of Garlic
    1 tsp Cumin
    1 tsp Chili powder

Directions

Cook egg noodles according to package

Heat medium skillet over medium heat, spray with non-stick cooking spray

Drain and rinse pinto beans
Drain tomatoes

Chop onion and garlic add to skillet and cook for 2 mins until fragrant, add pinto beans and tomatoes, stir until well combined.

Add cumin and chili powder and stir

Allow to simmer, stirring occassionally, until excess juices are absorbed

Place noodles in casserole dish and spoon bean mixture on top.

Sprinkle with Parmasean cheese if desired

Makes 6 - 2 cup servings
