Soyrizo Sweet Potato Casserole

Ingredients

    8 oz soyrizo
    1 medium sweet potato
    16 egg whites

Directions

1. Saute soyrizo in a skillet with just a little vegetable oil

2. I cook my sweet potato in the microwave in a bowl of water for 5 minutes. This softens it enough that you can just peel the skin off without any effort.

3. Cube the sweet potato and put into a casserole dish.

4. Add the sauteed soyrizo to the casserole dish.

5. Add 16 egg whites to the casserole dish.

6. Mix thoroughly to coat the soyrizo and sweet potato with the egg white

7. Bake in the oven @375 degrees for 25 minutes or until the egg whites are no longer liquid.
