Squash, winter, acorn, raw, 1 squash (4 inch dia)
Apples, fresh, 1 large (3-1/4" dia) (approx 2 per lb
Onions, raw, .25 cup, chopped
Cinnamon, ground, 1 tsp
Salt, 1 tsp
Lemon Juice, .5 fl oz
Ricotta cheese, fat-free, 4 oz
Cheddar Cheese, .25 cup, shredded (remove)
Meanwhile, saute the apples and onions in a little bit of butter with the cinnamon and salt. When the onions are translucent, remove from the heat and add the lemon juices and the cheeses. Stuff into the cavity of the squashes and bake for another 20 minutes.
