Beans, Beef, and Rice

Introduction

Number of Servings: 8

Ingredients

    2 cups uncooked minute brown rice
    1 tbsp olive oil
    1/2 cup chopped onion
    1/2 cup chopped green pepper
    1 clove garlic, chopped
    3/4 pound lean ground beef
    2 tsp cumin
    1 tsp salt
    1/2 tsp chili powder
    1/4 tsp cayenne pepper
    2 can kidney beans, drained
    1 can tomato sauce

Directions

Cook brown rice according to directions and set aside.
Heat olive oil over med-high heat in large skillet. Add onions, peppers, and garlic. Cook, stirring, 3 minutes.
Add ground beef and cook through.
Add spices, kidney beans, and rice. Cook until heated through and fragrant. Add tomato sauce and stir. Taste and adjust seasoning to your liking.
Makes 8 servings, 1 cup each.
