Best Recipe Oatmeal Chocolate Chip Cookies

Introduction

This is my family's favorite cookie of all time and comes from the Cook's Magazine Best Recipe cookbook. We all like the oat-chocolate combo. For holidays, these cookies "dress up" nicely by adding dried cranberries or candied orange peel to them. Ingredients

    1.5 cup whole wheat flour
    0.5 tsp baking powder
    0.5 tsp salt
    1 tsp cinnamon, ground
    0.5 tsp nutmeg, ground
    2 sticks unsalted butter, softened
    1 cup unrefined sugar
    1 cup brown sugar
    2 large eggs
    3 cups regular rolled oats
    1 cup semisweet chocolate chips

Directions

Preheat oven to 350 F, placing the oven racks into the lower and middle positions. Line large cookie sheets with parchment paper or aluminum foil (this makes clean up a breeze). Whisk together flour, baking powder, salt and spices in a medium bowl. Cream butter and both sugars together in a large bowl until fluffy, add one egg at the time and mix on medium setting of a hand-held mixer until combined. Add in the flour mixture and stir by hand until all the flour is moistened. Stir in the oats and chocolate chips until well distributed through the batter. Using two teaspoons, make about golf ball sized lumps and place them on the cookie sheets about 2 inches apart (this placement should give you about a dozen cookies per cookie sheet for a total of about 32 cookies). Place two sheets in the oven at the time. Bake for a total of 22-24 minutes, switching the sheets from top to bottom and front to back about halfway through baking. This ensures that your cookies will bake evenly. Cookies will be done when just the edges are lightly browned - if they over bake, they will turn hard, so unless you like really crispy cookies, err on the side of underdone. Let the baked cookies cool on the sheets for a couple of minutes then transfer to racks to finish cooling. Makes about 32 cookies, one per serving.
