Ham and 4 Cheese Rigatoni

Introduction

This was my son's first dish he selected for cooking class. It turned out delicious! We adapted the recipe to our liking and added broccoli as a side dish. Everyone loved it! Ingredients

    3 cups 1% milk
    1 Tbsp. chopped carrots
    1 Tbsp. chopped celery
    1 Tbsp. chopped onion
    1 Tbsp dried parsley
    1/4 tsp hot pepper sauce
    1/5 bay leaf
    Dash of nutmeg
    12 oz. rigatoni (measured dry, then cooked)
    1/4 cup Shedd's Spread Country Crock Churn Style
    1/4 cup whole wheat flour
    1/3 cup asiago cheese or parmesan
    1.5 cups Sargento Shredded Cheddar Jack cheese
    1.5 cups Sargento Shredded Mozzarella
    16 oz. Smithfield Boneless Ham Steak, 97% fat free
    1/5 tsp. chili powder

Directions

Combine milk, carrots, celery, onion, parsley, hot sauce, bay leaf, and nutmeg in a sauce pan and bring to a boil. Reduce heat to low and cook 10 minutes. Strain and reserve milk.

In another sauce pan, melt butter, then add flour to make a paste. Add reserved milk. Stir constantly until mixture thickens. Remove from heat and add cheeses.

Cook rigatoni in boiling water according to package instructions.

Chop ham steak, heat one minute in the microwave. Mix ham, rigatoni, and cheese mixture together and pour into a 2.5 quart dish that has been sprayed with olive oil spray.

Bake in 350 degree oven for 20 minutes.
