These muffins are made with honey instead of sugar and whole wheat flour. They are really light and yummy with lots of coconut and a few chocolate chips. Ingredients

1 1/2 c. Whole Wheat Flour
2 tsp. Baking Powder
1/2 tsp. salt
1 Egg
1/2 c. Honey
1/2 c. Skim Milk
1/4 c. Butter, salted
1 tbsp. Lemon Peel
1/4 c. Hershey's Special Dark Chocolate Chips
3/4 c. Coconut, raw, shredded
Directions
Preheat oven to 375 degrees. In a large bowl, combine flour, baking powder and salt. In another bowl, beat egg, honey, milk, butter and lemon zest; stir into dry ingredients until just moistened. Fill greased muffin cups 3/4s full. Bake 18-20 minutes or until muffins test dones. Cool in pan for 10 minutes before removing to a wire rack.
