Galumpkies (Stuffed Cabbage)

Introduction

Ingredients

    2 pounds extra lean ground beef
    2.5 C cooked rice
    1 medium onion, chopped fine
    2 medium heads of cabbage
    2 cans Campbells Healthy Request Tomato Soup
    1 cup water
    2 cans tomato sauce (I use no salt added)
    3 T brown sugar
    1 T lemon juice

Directions

Mix uncooked beef, cooked rice, and onion. Add seasonings to your liking (garlic, oregano, pepper, basil or parsley, etc.) Mix well.

Meanwhile, bring a large pot of water to a boil. Boil cabbage for 5 minutes to loosen leaves. Turn off heat. Take off 3 leaves at a time for filling, leaving the rest in the water.

Combine remaining ingredients to make sauce. Put a small layer of sauce on the bottom of a large crock pot.

Put scant 1/4 cup of meat mixture into center of leaf, spread out into a log shape. Roll cabbage leaf, tucking sides in. Layer rolls in crock pot, pouring sauce over each layer.

Cook 8 hours on low.

Makes 24 rolls, or 12 servings
